Tender Mouth Watering BBQ Ribs

This is a recipe I have fixed several times and the ribs always come out so tender they fall off the bones. The preparation and cooking is time consuming but worth it.

Ingredients:

One rack of Baby Back ribs
1 tablespoon brown sugar
1 tablespoon Essence of Emeril
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon cayenne or red pepper
1 tablespoon lemon juice
6 ozs BBQ sauce

(For two racks of ribs double the ingredients, for three racks of ribs triple the ingredients, etc.)

Rib selection and preparation:

Select Baby Back ribs with little fat and a good appearance. Use a sharp knife to remove excessive fat. On the bone side run a sharp knife under the membrane and pull up cutting it, then grip the membrane and pull it off. This may take several attempts but it is worth the work. Thoroughly wash the rack of ribs under cold water and pat it completely dry with a paper towel. Brush lemon juice on both sides of the ribs and let sit while you prepare the dry rub.

In a cup thoroughly mix all the dry ingredients (brown sugar, Essence of Emeril, salt, ground black pepper, paprika, cumin, garlic powder, cayenne or red pepper). Sprinkle the dry ingredients on both sides of the rack of ribs and hand rub them in. [You may substitute any of the ingredients to your preference.]

Double wrap the ribs in aluminum foil so the juice won't drip out while cooking. Place the ribs in refrigerator overnight and dream about the delicious ribs you'll be eating the next day. [Ribs need to sit in refrigerator at least 4 hours.]

Cooking:

Place ribs, bone side down and do not turn, in 250 degree oven and cook for 4 hours. After ribs are cooked gently remove them from the aluminum foil. Be careful because they will fall off the bone. You can finish cooking them on a grill or in an oven. I prefer a grill.

Grill - Place the ribs on a hot grill and coat both side with your favorite BBQ sauce. Cook for 10 minutes while turning and applying more BBQ sauce. When the sauce turns dark brown and caramelizes the ribs are ready to eat.

Oven - Brush your favorite BBQ sauce on both sides of ribs and place on a baking pan. Put in a 350 degree oven meat side down and cook 5 minutes. Turn ribs over so bone side is down and apply more BBQ sauce. Cook until the sauce browns and caramelizes (about 5 or more minutes). Ribs are ready to eat.
